First time trying Spaghetti Squash

Before clean eating, there was no way I'd get close to cooking meals for myself, and preparing veggies for that matter!
Looking back, I remember I would always come to work with at least three mircowavable meals junk (that's right! three! that's $$) or walk to the nearest convienence store and buy chips, more microwavable junk, and a bottle of diet coke.
Seriously, the only form of vegetable that I bought was a bag of baby carrots. Since I favored more junk rather than nutritious and whole foods, usually those bag of carrots would go dry and remain in the fridge til they were no longer good (that is not the case anymore) :o)
Since eating clean, my tasting buds have come to love vegetables, whole grains, lean meats, natural nut butters, and fruits!
Tonight was my first time trying Spaghetti Squash, and all I can say is where have you been all my life!
It was so fabulous. When I was de-meating the squash, I was really filled with joy! because it was just THAT EASY to fork. Dinner was a breeze.
Looking back, I am astounded at all the veggies I was reluctant to try but ended up loving it once I tried it. I can't wait to discover new foods and new ways to cook.

I love spaghetti squash simply because I love stringy things :) It's not my fave squash but it's noodly and fun to eat.
I LOVE eggplant with all my heart. I fell in love with it last year and can't stop thinking about it :)
I love Spaghetti squash too. I just got a Prego tomato sauce this weekend and forgot to read the label. It is so damn sweet, I just feel like tossing the jar in the trash can!

I love spaghetti squash and just tried it for the first time last year! soo good!
I love that you have Kabocha & Spaghetti squash on one plate :) And I could have written this post. I use to never eat vegetables and rarely tried anything new. I'm having so much fun discovering all these fantastic, healthy and easy treats (who needs candy when you have hot kabocha!). And it's amazing how much preparing your food makes you appreciate and savor it more.
