Hump Day is almost ovaaah! I started the day dashing out the door heading to work, which started at 545am- 830am. I did not brush my teeth, comb my hair (not that it matters), or eat breakfast. By the time I was heading home at the end of my shift, I was starving and stinky. Oh how I wanted to brush my teeth badly :o( With no oatmeal and eggs to be found around the house and the lack of will to spend money on breakfast...I had left overs from last night.

Last night I wanted dinner. I had two choices: A) Buy ingredients and whip something up or B) Go to the taco shop and buy a burrito!

I knew I'd regret the bloat and uncomfortable fullness if I went with the taco shop option, so grocery shopping it is!

I went to the market not knowing what I wanted, I started out in the meat section and it was a choice between chicken and turkey. "I've had chicken plenty of times, waaaay to many times. Let's take a break from that tonight. oh! the turkey is cheaper!"

Then it was produce: Yellow onion, brocolli, summer squash, and jalapeno.

Then it hit me that I should make... spaghetti. Not just regular ole' spaghetti, but spaghetti with copious amounts of veggies that you can imagine. I remembered my mom had one last jar of pasta sauce. cha-ching. But I had a hard time finding noodles, because the cheapest one was $3.29! hell to the nah. Plus I didn't want too much carbs at night, so I went to the check-out lane noodle-less.

Then it hit me...Spaghetti Squash. Why is it that the light bulb always turn on towards the end?



Cook the spaghetti squash according to directions.

- In a skillet add olive oil, then add the following:
- Large onion
- De-seeded and chopped jalapeno
- chopped cubed pieces of yellow summer squash
- Brocolli Florets (weird I know, but it gets tenders and good!)
- Chopped garlic (at the end)

Then add ground turkey and cook it though. When it's all cooked, add your pasta sauce.

-Salt and Pepper
- A splash of fish sauce (weird I know! it isn't fishy at all, it adds a bold flavor)


So delicious! I have plenty of left overs to last me a few days. It's such a money saver and I look forward to eating it a lot, I actually get excited. Sometimes I'll add bulgarian feta to it, since it's the only cheese source available to me. It's really delicious, the sharpness eases well with the veggies and sauce :o)



Today I bought a scoby to brew my own kombucha. I'm very excited. I actually bought it from Averie, I'm positive she had no idea who I was but I didn't want to blurt out that I was a blog reader of hers. It felt like meeting a blog celebrity ha. I felt uncompleted after I left. I couldn't hold it in, so I texted her just to tell her I was a reader. I half expected her to get creeped out, but she was glad. phhhew. Along with the scoby, I also bought her booch and it was wonderful. I can't wait to make my own!


Averie's homemade booch. yuuum. I drank the whole thing and remembered how much I love kombucha. I later met with Angel because he purchased a Scoby as well, let's see how this process goes. Hope no one dies.


So far I boiled ~ 2.5 liters of water, poured in a cup of sugar, and let eight green tea bags steep. Now I just have to wait til it's room temperature. That was 3.5 hours ago, it's still really really warm! ahhhh. Patience :o)

I have never tried spaghetti squash, I really want to do it now!! It looks so good, way better then a burrito ;) Happy Friday!
