I finally discovered a new way to bake chicken! hoorah! This may not be a big deal to you, but it is a HUGE deal for me. My life changed forever when I bought the Foreman Grill. It changed the way I viewed chicken for good. My chicken doesn't have to be dry and bland, in fact it can be delicious.


Before I ever purchased the FG, I could NOT stand to eat chicken. I was horrible at cooking chicken. It was either under-cooked to the point I lost my appetite because there was a hint of pink. It was either too chewy, which meant to me that it was under-cooked (but the pink was hard to detect), or it was either TOO-cooked, where the chicken was so hard that it jabbed my cheeks and gave me a cut.

I preferred eating my chicken way over-cooked, that way I knew I wouldn't get salmonella poisoning. Was the eating experience enjoyable? no, but at least I knew I wouldn't end up in the hospital. So after my misery with chicken, I switched to fish, but that got expensive over-time.


Thank goodness for the foreman grill, but there comes a time where I need to learn how to bake chicken without it. So last night I took it to the test, and hoorah, success. I almost shedded a tear.

I practically had to beg my friend to ask his mom for her method of baking chicken. She is the queen of chicken, eats it practically everyday. No joke. Do you believe me? well...you should.

So here is what she shared with me.

1) Bake the chicken breasts on a roasting pan at 350 for 40 minutes. Marinate it if you like. For mine, I sprinkled it with Mrs. Dash.

2) Then take out the pan and wrap foil nicey around the edges, making sure you cover the top entirely. Pop it back in the oven for another 20-25 minutes, it could take longer depending on your oven, so have a thermo stat.


It looks similar to the picture above, but if I could take pictures with my eyes (oh I wish), the chicken looked really moist. Wow, for the first time ever, I felt satisfied.



This morning I had oat bran for the first time.

I mircowaved 1/3 cups of oat bran with water and a splash of almond milk. nuked some bananas along with it and added fresh strawberries.

It was delicious! it was amazing, it was fantastic, it was magical, it was smooth, it was creamy, and I am having it tomorrow again. har har. Fueled me up good for my 10 hour school day.

After my 3 hour lab, I came home and was really stressed out. To the point where I almost cried, I am tired of school. I need to change my attitude towards something positive, but at this point, it's too late. I've muttered curse words under my breath for 2 1/2 months, it's a work in progress thing.

So to help alleviate the stress I had wine and cheese.



I'm kidding, it wasn't wine, it's actually Sparkling water + Crystal lite = yummy. I still have 8 more months til I'm legal! :o) And that cheese, that cheese was amazing. Would you believe me if I said it was Almond Cheese? Jalapeno/pepper jack. So spicy and creamy. I can't believe it's not real real "cheese".





Are there any type of dishes or item in particular that you can't stand to cook?

Haha!! I was reading this it reminded me of all of my attempts to cook chicken and believe me I am a GF lover too! I need to try this method ASAP!

Nothing like sparkling water and cheese for stress release! :) I have a love-hate relationship with labs....I love them but they always take so long....Are you a science major?

And I love oat bran :)
