Hey guys, how is everyone doing?

Lately I've been feeling 'meh' and meh seems to describe the lowest of lows, less than mediorcity all mixed together in one emotion, hence I am feeling "ooooookaay" sigh. I felt like a blob this week (which explains the lack of posting).

This feeling interfered with my gym plans yesterday. I just felt too gross and useless (gross because I needed a shower) so I took a shower and felt clean. Then I stained my shirt with pumpkin, and I felt unclean all over again.

Feeling 'meh' will suck up every some ounce of your motivation. But I redeemed myself by going today, doing 60 minutes on the StairMaster made me feel better.

Instead of having the usual nut butter in my oatmeal this morning (okay I lied! this picture was from a couple of days ago) Feeling meh the past couple of days prevented me from taking pictures and blogging about it.

All I can say is that I fell in love with Tofu this week, and in the past I just never knew how to make use of it. I found a way to make it into a healthy dessert, I even topped it on oatmeal.


It was cold and tasted like Pumpkin Pie

I made sure to save leftovers in the Magic Bullet to eat seperately, because it was just too good.

Tofulicious Pumpkin Pie Ingredients:
- 3 oz Firm Tofu
- 1/4 cup of Pumpkin Puree
- Pumpkin Spice and Cinnamon (to your liking)
- One packet of Stevia (or to your liking)
- 4 oz of Unsweetened Vanilla Almond Breeze
- A little drizzle of Agave Nectar (optional)

Mix everything together, then you pulse/puree everything together. You can store it in the freezer for a while to make it taste extra thick and cold. It was so delicious! You can re-create it anyway you like by adding protein powder or making your own flavors!

I was also bored and decided to make Granola




It was my first granola-making attempt. I learned that mixing the golden raisins and cranberries before the baking process was a bad idea! and that I should mix it in last once everything was baked. It turned out great anyway and my co-worker enjoyed it. (of course I took out all the golden raisins after, since it was burnt)

I realized that I enjoyed the nuts (walnut/cashew/sunflower seeds/ pumpkin seeds) far more than the dried fruits. So next time I would resort to just using a variety of nuts and stick to one dried fruit.

I used dried pineapple, pear, golden raisins, and cranberries.


Also, I discovered this amazing website Mint upon coming across it in a magazine today.

It is an easy way to keep track of your budget and where your spending goes, which in turn would help you save (once you see how your spending habits are).

I felt productive whilst transfering my bank statements to the Mint account, I was doing something important! hoorah! I looked at my budget and my spending habits for December and January. Unfortunately I was very embarrassed, I've been using my money unwisely and it has gotten me to re-evaluate my spending.

Most of my money has been used via shopping (understandable) since it was the holidays (hence buying gifts) but since that is all over now, I need to start saving up!

Goals this week:

- No Starbucks (I have instant coffee, darn but I need creamer $, tea it is!)

- No shopping for un-necessary things (you wouldn't believe what I'd get, I was going to get a tea cup today, does it look like I need tea cups? no)

- No junk food
- Come up with a budget plan
- Save up the paycheck and transfer to it savings (at least half)
- Drive less, maybe walk more?
- No eating out
- No more un-necessary grocery trips (unless it is an emergency and I am starving)
- No spending on any sort of clothing! (this should be for the whole year, but let's make it 6 months)


All the little things count. I used to be so frugle with my money. I wouldn't even buy chapstick, let alone clothes! but since I've been working, I just felt like I could do whatever I want with my money. Though in most cases, the things I spent my money on didn't necessarily make me happy. I think that was why I was in such a spending phase (so that I can feel good about myself).

Most importantly, I am hoping with my goals, that my budget analysis for the end of January would make me feel content and proud of myself! rather than embarrassed.


Where do you think most of your spending goes?

I know for sure that it is gas and groceries! I need to invest in a bike.

Great goals! It's funny how you don't realize how much you've really been spending until you sit down and punch all the numbers ... I understand! Ha.

Also, I totally know "meh"!!! I hope your meh goes away soon and very soon, Angela! :)

Too funny.. I was multi-tasking by watching The Bachelor online, reading blogs and looking up recipes on Nasoya's website. Then I saw this delicious recipe and it's exactly what I wanted. Can't wait to try tomorrow!
As for budgeting.. it's a major weakness of mine, and I would have to say the majority goes to food and gym related stuff (wow I've been surprised by how expensive yoga is!).

I agree with meh being added to the dictionary. Its one of my favorite words :) Glad you're busting out of your meh-ness. Isn't making granola awesome? I love how easy it is, I make a batch pretty much every other week. My dad has not recruited me to even make his granola for him haha.

Most of my money goes to our house, but in terms of regular spending- the grocery store! And I can't think of a better place to spend it than on healthy eats

Ha I had this financial realization two months ago and I am still a work in progress. All i'll say is don't be very hard on your self. I cut down all my impulsive trips to the grocery stores and also Starbucks! It has gone down from 4-5 times a week to just 1 probably and that saves good $ for the week!

I love using "meh" as well. :)

Starting a budget was very eye-opening for us. We had no clue where our money was going, but now I realize it was a lot of eating out and just buying stuff and not paying attention.

Good for you for setting up some goals!
